Cranberry Coconut Bars

 

 

- 1 2/3c All Purpose Flour

-3/4c Sugar

-3/4c Butter, Cubed

- 1c Dried Cranberries

- 3/4c Brown Sugar, Packed

- 2c Sweetened Coconut Flakes

-3 Eggs

-11/2 tsp Vanilla Extract

-1/4 tsp Salt

 

Preheat Oven to 350°F.

Combine 1 1/2c Flour and the Sugar. Add in Butter with a fork until mixture resembles crumbs. Press onto bottom of a baking pan, and bake for 15 minutes or until lightly browned.

Combine coconut, cranberries, brown sugar, 1/3c of all purpose flour, eggs, vanilla and salt into a bowl. Mix well to combine. Spread over hot crust. Continue baking until golden brown. Cool completely before cutting.
