Danish Butter Cookies



-2c All Purpose Flour

-3/4c Sugar

-1c Turbinado Sugar

-2 Eggs

- 1/2 tsp Vanilla Extract

- 1/2c Softened Butter


Preheat Oven to 350°F.


Combine butter and sugar into a large bowl. Add in vanilla. Using an electrix mixer on high speed, beat until light and fluffy. 

Beat in 1 egg. Reduce speed to low and add 2c flour. Form dough into a 3/4" thick disk. Wrap in plastic and chill for 2 hours.

Let disk of dough sit at room temperature until softened. Roll out on a floured surface, shifting it often and adding more flour until 1/4" thick. Cut with a cookie cutter, and transfer to parchment paper lined baking sheets. Chill for 15 minutes.

Beat egg in small bowl with 1  tsp water. Brush cookies with egg wash and sprinkle with Turbinado Sugar.

Freeze for 10 minutes. Then bake for 10-15 minutes or until golden brown. Let cool completely.
